Bishops Head 2012 Waipara Valley Merlot, Winemaking Notes:
Grown on the 'three sisters' vineyard on Mackenzies Rd in Waipara, North Canterbury, New Zealand. There grapes were hand harvested on the 25th of May. Wild yeast ferment in open fermenters. Relatively short time on skins of around 3 weeks. Aged in old french oak barriques for 18 months.
Mulberry, plum, mocha and old leather aromas. Brooding on the palate with dark fruit and spice, fine but abundant tannin and a firm acidity. (Winemakers Note, Jul 2014)
Delicious partnered with red meats and game or winter casseroles, and scrumptuous with a strong cheese.
