Traditionally the last pick of the year the 2011 Riesling was hand harvested by the winery 'family' at our Mairehau Vineyard. The grapes were 'foot crushed' (see our facebook page) and left to fester for 24 hours before pressing to tank. Tank fermented at cool temperature (for over 3 months. Wild yeast ferment. on lees for 10 months before blending and bottling.
