Bishops Head 2012 Waipara Valley Pinot Noir Wine Notes:
From the Chloe and Brothers blocks on our Mairehau vineyard in the Waipara Valley, North Canterbury, New Zealand. Hand harvested in four parcels between 24th of April to the 8th of May. 5-7 days of pre-ferment maceration led to a wild yeast ferment. Total maceration time was 5-6 weeks then pressing and barreling down. In barrel for approximately 18 months before bottling.
"The bouquet is tight and firm with intense aromas of dark red berry fruits and a complex array of dried herbs, undergrowth and spicy oak with secondary mushroom, earth and cedary, spicy oak. Medium-full bodied and elegantly proportioned, concentrated and complex secondary flavours of dark red fruits, dried herbs and earth are intermixed with spicy and cedary oak. The wine is tight and intense with a concentrated dry mouthfeel from fine-grained tannin extraction. Lacy acidity provides liveliness and tension, and along with the extraction carries the wine to a long, dry-textured, but brisk, lingering finish." Raymond Chan Wine Reviews, October 2014
