Bishops Head 2012 Waipara Valley Fume Blanc, Winemaking Notes:
New for us is our 2012 Fume Blanc, Fume, meaning 'smokey' in French. We have used a Sauvignon Blanc grape which is barrel fermented and barrel aged, so this wine is more like a traditional Chardonnay. From the Glasnevin Gravels of the our Mairehau Vineyard, the wine was pressed to 2 puncheons and a slow wild yeast ferment ensued. The wine was in the barrel for 10 months before bottling.

Great with any seafood. Try it with crayfish in a creamy sauce, salmon ceviche, or scallops and chorizo. Also pairs extremely well with light chicken dishes and salads.
